Gnocchi is a simple, tasty dish almost anyone can make!

Martina Baldassi, Staff writer

Gnocchi is a typical Italian recipe often made by nonnas (grandmas). It is not commonly known in the United States, but it is quite delicious. The sauce I chose to pair it with is a healthier, vegetarian alternative to bolognese, a well-known meat sauce. This is an amazing dish to indulge in once in a while. It is truly a comforting dish for almost anyone to enjoy.

Ingredients

Gnocchi:

8-10 potatoes

Two cups of flour

One egg

One pinch of salt

Sauce:

One onion

One carrot

One celery

One pack seitan

One clove garlic

Olive oil

28 oz large can of tomato

Recipe

1. Boil potatoes until tender, strain well.

2. Remove peel, place potatoes into large bowl, mash thoroughly.

3. Slowly add in flour and continue to mash the mixture until flour is fully combined.

4. Add egg and salt. Fully combine into a ball. Wrap and refrigerate.

5. For the sauce, chop up the carrot, celery and onion, either with a knife or in a food processor, until finely sliced.

6. In a large, deep pan, add finely-chopped garlic clove, onions, carrots, and celery with olive oil as needed. Sauté until golden brown.

7. Finley chop or put a pack of seitan in a food processor until it is in small pieces (not too fine). Add it to the pot and stir.

8. Add the tomato puree and continue to cook until it tastes adequate. Add salt and pepper to taste.

9. Put a large pot of salted water to boil.

10. Roll up the gnocchi dough into snakes the height you want your gnocchi, then cut them into even pieces until you have used up all of the dough.

11. Boil until they rise to surface, then drain the pot.

12. Mix the sauce with the gnocchi. Serve with Parmesan cheese.
